Discover the Journey of Coffee and Taste this Specialty Coffee

Coffee drinking habits and culture are diverse and reflect the unique characteristics of each region. From the way coffee is brewed to the social context in which it is consumed, coffee remains a beloved beverage that brings people together and adds richness to daily life.

How it started...

Coffee has been discovered at least a thousand years ago. Many believe that the Arabica coffee type originated from South Sudan and Ethiopia, while Robusta's original habitat was in West Africa.


Initially, when the beans were not roasted and ground to create the beverage we know as coffee today, people consumed the coffee cherry and coffee plant leaves for their stimulating effect.


Nomadic herders even mixed coffee with fat and spices to create "energy bars" to maintain alertness during their time away from home.

Later, they began brewing a stimulating, caffeine-rich drink from the coffee leaves and coffee cherry peels.

How it spread...

It is believed that African slaves brought coffee to Yemen and the Arabian Peninsula. In the 15th century, Sufi saints brewed a tea called "quishr" (others say "qahwa" or even "Arabic wine") from the coffee fruit, which helped them to stay awake during the night-long meditation and recitation zikr rituals.


The news of its stimulating effect spread quickly, and soon coffeehouses - the precursors of those in the East - opened, where merchants and scholars could enjoy the beverage during free discussions.

Some worried that the quishr was incompatible with Arab beliefs, but coffeehouses continued to thrive and promote coffee.


From the early 16th century, Arabs began roasting and grinding coffee beans to create a beverage similar to what we drink today. This method quickly spread throughout the Ottoman Empire, Egypt, and North Africa.

Almond-Fig Latte

Figs are found as a flavor enhancer in coffee in many parts of the world, but as an ingredient, they are very rare. In this recipe, we pair them with almond extract, which adds real depth to the latte.

  • Steam 250 ml of milk with 1 teaspoon of almond extract and 5 drops of fig extract (here you can find an alternative one) in a milk spout until it reaches 60-65°Celsius (140°-150°F, ~335 K), or until the bottom of the milk spout is too hot to touch, then pour it into a cup.

Serving: Pour the coffee over the flavored milk and serve.
