The method to process coffee fruits has a significant impact on the final quality of the coffee, so great care must be taken to ensure the fruits are handled properly.

Processing the Coffee Fruits

To extract the coffee beans from the coffee cherries, the coffee fruits must be processed. The methods can be diverse worldwide, but the two most well-known procedures are dry (natural) and wet (washed or semi-dry) processing.


The coffee cherries are sweetest when they are at their ripest stage, and they must be processed quickly, within a few hours of harvesting, to preserve their quality.


The processing has an impact on the quality: if done poorly, it can ruin even the most carefully cultivated, hand-picked fruits.

Low or Excellent Quality?

The two basic processes may differ, but their goal is the same: to prepare the coffee for drying. Coffee beans processed using dry or semi-dry methods rest for 2 months while their processing continues in the dryer, where various husks are removed.


The resulting coffee beans are categorized by producers based on their quality into low and excellent quality categories. The coffee beans are sorted by sorting machines according to their shades. The low and medium-quality coffee beans are placed in containers, while the excellent quality coffee beans are packed in protective bags or vacuum-sealed and transported by ship.

The most effective remedy for a developing cold is a ginger, honey, and lemon concoction with a splash of whisky. Using a percolator coffee maker, we can make two small servings of it.

  • 1) Brew 32 g of coarsely ground coffee with a 300 ml percolator coffee maker.
  • 2) Spoon 1 tbs of lavender honey into the glasses, then add 1 cm of freshly cut ginger and half a lemon's zest.
  • 3) Bring 250 ml of water to a boil, and pour the mixture into the glasses up to halfway. Let it stand for 1 minute.

Serving: Pour 75 ml of freshly brewed coffee into each glass. Stir the drinks and serve with a spoon.
